I thought it was about time we started to discuss our food, how it has developed over the past year and a little insight into the reasons behind our menu.
When you come into the shop you may notice our menu is a little different to most others out there. It’s mainly veggie for a start.
When we first opened our doors we had two sandwiches, toast and a breakfast pot on the menu. We knew we wanted our food to be simple - after all coffee was our main reason for opening.
You may not know that we built the shop ourselves, and knowing that our food was going to be simple (+ due to the financial constraints) we only made a teeny box kitchen. No hot cooking equipment. Just a toaster with fridges and prep surfaces.
Over a while, ideas from our customers began to surface; “I went to Australia and they were eating…”, “If you had tostada on the menu I’d eat there every day…” these suggestions began to influence us, and we were soon creating topped bruschettas loaded with smashed avocados, grated fresh tomatoes, hummus with winter slaw and so on.
The equipment in our cold kitchen increased - soup makers for locally sourced veggies to be lovingly made into soup; food processors for making hummus, pesto and smashing beans; and then our vitamix for blending and pulsing.
We then began to experiment with RAW food, with a cold kitchen it was the logical next step. Once we started eating this food we found our own health and well-being substantially increasing, which has led to us increasing the quantity of this style of food on the menu. We are (amongst other things) now making our own “Nutella” (hazelnuts, cacao, maple syrup - no nasties), green smoothies with added boosters and RAW energy bars and cakes.
As a team we have begun to really begin to understand the power of simple, freshly made veggie food and it makes us proud to serve something that is actually going to make people feel better after eating it. (don’t get us wrong though - we LOVE a bit of cheese and ham… after all, life is ALWAYS about balance, right?)
We have joined the Portsmouth Food Partnership to help develop ideas for healthy eating within the city and are constantly nurturing this side of our shop.
We’ve come a LONG way from the first day with our two sandwiches and toast - and are incredibly thankful for ideas and support given to us by everyone who comes back again and again to try our food. It is an exciting journey, and one that seems to be taking its own path x
