We’ve been playing a fair bit with cold brew recently.
It is made by steeping coffee in room temperature water over a prolonged period. We’re finding around 14 hours is giving us the best results. The next morning we filter the brew which leaves us with a concentrate. This is then added to water or milk, dependent upon your preference.
Cold brew coffee is naturally sweeter due to its lower acidity. This is because the coffee is not brought into contact with hot water, and therefore a different chemical reaction occurs.

This weeks cold brew, is made using a Ugandan coffee from Ganda Kinone Kamwenge; and this brewing process really brings out the chocolate in the cup.
